A conversation with the Chef

As we celebrate the opening of our new dining hall, we wanted to introduce you to Chef Guillermo, who provides amazing meal experiences here at camp.  We learned about Chef G’s inspiration, some of his favorite food, and why he enjoys what he does. 

TOS: How long have you been a Chef?

Chef G: I started my culinary journey in 1999 as a cook at Walt Disney World, where I gained valuable experience in a dynamic and fast-paced environment. Over the years, I worked my way up through various roles, including line cook and sous chef, mastering different cuisines and refining my skills. Since then, I’ve taken on diverse management positions in the restaurant industry, from running kitchens to managing entire restaurants. This journey has allowed me to develop a well-rounded understanding of both the culinary and business aspects of the industry, ensuring I bring passion, creativity, and efficiency to every kitchen I oversee.

TOS: What inspired you to cook for a living?

Chef G: My grandmother was the heartbeat of our family, and she wielded her magic in the kitchen. Growing up, I watched her turn simple ingredients into unforgettable meals that brought joy and laughter to our family gatherings. Her kitchen was more than just a place to prepare food; it was a sanctuary where bonds were strengthened, stories were shared, and hearts were nurtured. Seeing the happiness she created through her cooking inspired me to follow in her footsteps. I wanted to create that same sense of warmth and togetherness, to be the reason people come together and make memories. Every dish I prepare is a tribute to her legacy and a step towards bringing that same joy to others.

TOS: Do you have a favorite cuisine you like to make? And a favorite meal?

Chef G: I have a deep passion for Spanish cuisine, especially the fusion of traditional Spanish flavors with influences from the Americas. This blend of culinary traditions creates a rich tapestry of flavors that I find endlessly inspiring. My favorite dish to make is paella. It’s a beautiful, vibrant meal that captures the essence of Spanish cooking. The combination of saffron-infused rice, fresh seafood, and aromatic spices is simply magical. Every time I prepare paella, I feel like I’m sharing a piece of Spain’s cultural heritage with everyone at the table. The process itself is also incredibly rewarding—from the careful preparation of ingredients to the final presentation, it’s a culinary journey that brings immense joy to both the cook and the diners.

TOS: What do you enjoy the most about being a Chef at TOS?

Chef G: What I enjoy most about being a Chef at TOS is seeing the joy and surprise on the kids’ faces when they discover they can have a delicious, well-prepared meal in a camp setting. There’s something incredibly rewarding about surpassing their expectations and watching their energy levels soar after a nourishing meal. It’s not just about feeding them; it’s about contributing to their overall camp experience, helping them feel cared for, and giving them the fuel they need to make the most of their activities. The smiles and the excitement they show, when they come back for seconds, make every effort worthwhile. It’s a reminder that food is not just sustenance, but a key part of creating memorable experiences.

TOS: Is there anything else you would like to tell us?

Chef G: Disney is not the most magical place on earth; it is Camp Champions. Why? Because at Camp Champions, the magic isn’t just in the attractions or the shows—it’s in the genuine connections made, the personal growth experienced, and the sheer joy of being surrounded by nature. Imagine waking up to the sounds of birds singing and spending your day conquering ropes courses, learning new skills, and laughing around a campfire with friends. Every moment is filled with a sense of adventure and community that creates memories lasting a lifetime. At Camp Champions, the magic is real and it’s all around you, making it a truly magical place on Earth.
